  1. For manchurian balls:-
  2. 1/2 cup grated carrot
  3. 1/2 cup finely chopped cabbage (Blanch cabbage before chopping.)
  4. 1/4 cup or 1 small size finely chopped capsicum
  5. 1/4 cup finely chopped springonions greens (scallion greens)
  6. 1/2 tsp black pepper powder
  7. 1/4 cup Maida
  8. 1/4 cup cornflour
  9. as per taste salt
  10. For Cornflour Paste:-
  11. 1 Tbsp cornflour mix with 2 Tbsp water
  12. For Gravy Or Sauce:-
  13. 2-3 Tbsp refined Oil
  14. 1/8 cup chopped spring onion whites + 1/4 cup chopped onion
  15. 1 Tbsp finely chopped ginger
  16. 1 Tbsp finely chopped garlic
  17. 2 spicy green chillies – finely chopped
  18. 1/4 cup finely chopped capsicum
  19. 2-3 Tbsp chopped spring onion greens
  20. 1 Tbsp soya sauce
  21. 1.5 Tbsp tomato ketchup
  22. 2 Tbsp green chilli sauce or red chilli sauce
  23. 1 tsp vinegar
  24. 1.5 cups water
  25. 1/2 tsp black pepper powder
  26. as per taste Salt
  27. 1/4-1/2 tsp sugar as required(optional)
  28. 1 Tbsp spring onion greens (scallion greens) for garnishing
  29. 1 tsp red chilli paste (optional for colour)
  30. 1/8-1/4 cup breadcrumbs for coating balls
  31. As required Refined Oil , for deep frying

Steps to make to make Veg Manchurian (gravy)

  1. For making Manchurian ball:-
    Take the all chopped & grated vegetables in a bowl and mix in the corn flour, maida, black pepper powder and salt.
  2. Do not knead like dough, mix well and press so that the veggies release their juices. Then take a small portion of the mixture in your hand.
  3. Press and roll it on your palm and make a round veggie ball. You can apply oil on your palm. I did not apply oil for making balls. Make all the veggie balls this way and set aside.
  4. For frying:-
    Heat oil in kadai for deep frying.
    Shape the balls before frying and coat with breadcrumbs. If the balls break before frying them in the oil, then add 2 to 3 tsp maida and make ball again.
  5. When oil is medium hot, then put veggies balls in it. Deep fry until crisp and golden from both sides. Remove them with a perforated spoon or spider strainer skimmer spoon.
  6. Place the fried veg manchurian balls on absorbent paper. After all veggie balls are fried, then make sauce.
  7. To make the sauce: -
    In a pan, heat 2 Tbsp oil and add garlic, ginger, green chillies. Sauté over low heat for 2-3 minute.
    Add chopped spring onions or onions and sautē until the onions are translucent. Add capsicum, springonion green and sautē.
  8. Now add the sauces – soy sauce, tomato ketchup and green chili sauce. Mix and stir very well. If you want red colour, then add red chilli paste. Also add sugar if required. Add salt, black pepper as required and stir again.
  9. Add 1.5 cup of water in it. Add corn flour paste. The sauce will begin to thicken.
  10. Then immediately, add the fried veg manchurian balls. Stir so that the sauce will coats the veggies balls evenly.
    Garnish with 1 Tbsp springonion greens (scallion greens)
  11. Serve manchurian hot as starter or with Szechuan rice
